Ingredients:
- 2 large English Cucumbers
- 0.5 tsp Sea salt
- 8 oz Full-fat cream cheese, softened
- 2 tbsp Heavy cream
- 1 tbsp Fresh dill, finely minced
- 1 tsp Lemon zest
- 1 tsp Fresh lemon juice
- 8 oz Smoked Salmon (Lox or Nova style)
- 2 tbsp Non-pareil capers, drained
- 1 tsp Everything Bagel seasoning
- 1 tbsp Fresh microgreens for garnish
Instructions:
- Slice the English cucumbers into 1/2-inch thick rounds. Place them on a wire rack or a layer of paper towels and sprinkle lightly with 1/2 tsp sea salt. Let sit for 10 minutes to sweat.
- Pat the tops of the cucumber slices completely dry with paper towels to ensure they remain crisp.
- In a medium bowl, use a hand mixer to beat the softened cream cheese, heavy cream, lemon juice, lemon zest, and minced dill for approximately 2 minutes until light, fluffy, and aerated.
- Transfer the cream cheese mixture to a piping bag fitted with a star tip. Pipe a uniform dollop onto each cucumber round.
- Cut the smoked salmon into thin ribbons and fold them gently on top of the cream cheese mousse.
- Garnish each bite with drained capers, a sprinkle of everything bagel seasoning, and fresh microgreens or dill sprigs.
