Ingredients:

  • 2 large English Cucumbers
  • 0.5 tsp Sea salt
  • 8 oz Full-fat cream cheese, softened
  • 2 tbsp Heavy cream
  • 1 tbsp Fresh dill, finely minced
  • 1 tsp Lemon zest
  • 1 tsp Fresh lemon juice
  • 8 oz Smoked Salmon (Lox or Nova style)
  • 2 tbsp Non-pareil capers, drained
  • 1 tsp Everything Bagel seasoning
  • 1 tbsp Fresh microgreens for garnish

Instructions:

  1. Slice the English cucumbers into 1/2-inch thick rounds. Place them on a wire rack or a layer of paper towels and sprinkle lightly with 1/2 tsp sea salt. Let sit for 10 minutes to sweat.
  2. Pat the tops of the cucumber slices completely dry with paper towels to ensure they remain crisp.
  3. In a medium bowl, use a hand mixer to beat the softened cream cheese, heavy cream, lemon juice, lemon zest, and minced dill for approximately 2 minutes until light, fluffy, and aerated.
  4. Transfer the cream cheese mixture to a piping bag fitted with a star tip. Pipe a uniform dollop onto each cucumber round.
  5. Cut the smoked salmon into thin ribbons and fold them gently on top of the cream cheese mousse.
  6. Garnish each bite with drained capers, a sprinkle of everything bagel seasoning, and fresh microgreens or dill sprigs.
