Ingredients:

  • 24 oz frozen seasoned waffle fries
  • 1 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 0.5 cup Irish stout
  • 0.5 cup heavy cream
  • 200g sharp Irish cheddar, shredded
  • 0.5 tsp smoked paprika
  • 1 cup corned beef, chopped
  • 4 slices thick-cut bacon, cooked and crumbled
  • 0.5 cup sour cream
  • 3 green onions, sliced
  • 0.5 cup pickled jalapeños

Instructions:

  1. Preheat oven to 425°F (220°C) with the baking sheet inside. Toss frozen waffle fries with olive oil, then spread in a single layer on the preheated pan. Bake for 18–22 minutes, flipping halfway, until mahogany-colored and crispy.
  2. While potatoes bake, melt butter in a medium saucepan over medium heat. Whisk in flour for 1 minute. Gradually whisk in Irish stout and heavy cream until thickened.
  3. Remove sauce from heat and fold in shredded cheddar one handful at a time with smoked paprika until the sauce is velvety and smooth.
  4. Remove crispy fries from the oven and cluster them slightly. Top with chopped corned beef and bacon.
  5. Drizzle with the beer cheese sauce and finish with sour cream, green onions, and pickled jalapeños before serving immediately.
