Ingredients:

  • 2 lbs party-style chicken wings
  • 1 tbsp aluminum-free baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 cup Frank's RedHot Original
  • 1/3 cup unsalted butter, melted
  • 1 tbsp honey
  • 1/2 tsp Worcestershire sauce

Instructions:

  1. Preheat your oven to 200°C (400°F). Line a large rimmed baking sheet with aluminum foil and set an oven-safe wire cooling rack on top.
  2. Thoroughly pat the chicken wings dry with paper towels until no surface moisture remains. This is critical for the crisping process.
  3. In a large bowl, toss the wings with 1 tablespoon of baking powder, salt, and garlic powder until every wing is evenly coated in a thin layer.
  4. Arrange the wings on the prepared wire rack in a single layer, ensuring they do not touch to allow for maximum airflow.
  5. Bake for 20 minutes. Cook until the skin starts to turn pale gold.
  6. Use tongs to turn each piece over carefully.
  7. Bake for another 20 to 25 minutes. Cook until the wings are deep brown and sizzling.
  8. While wings bake, whisk together the hot sauce, melted butter, honey, and Worcestershire sauce in a large bowl.
  9. Remove wings from the oven and immediately toss in the buffalo sauce. Serve hot.
