Ingredients:
- 2 lbs party-style chicken wings
- 1 tbsp aluminum-free baking powder
- 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 cup Frank's RedHot Original
- 1/3 cup unsalted butter, melted
- 1 tbsp honey
- 1/2 tsp Worcestershire sauce
Instructions:
- Preheat your oven to 200°C (400°F). Line a large rimmed baking sheet with aluminum foil and set an oven-safe wire cooling rack on top.
- Thoroughly pat the chicken wings dry with paper towels until no surface moisture remains. This is critical for the crisping process.
- In a large bowl, toss the wings with 1 tablespoon of baking powder, salt, and garlic powder until every wing is evenly coated in a thin layer.
- Arrange the wings on the prepared wire rack in a single layer, ensuring they do not touch to allow for maximum airflow.
- Bake for 20 minutes. Cook until the skin starts to turn pale gold.
- Use tongs to turn each piece over carefully.
- Bake for another 20 to 25 minutes. Cook until the wings are deep brown and sizzling.
- While wings bake, whisk together the hot sauce, melted butter, honey, and Worcestershire sauce in a large bowl.
- Remove wings from the oven and immediately toss in the buffalo sauce. Serve hot.
