Ingredients:

  • 1 lb frozen bone-in chicken wing sections (IQF)
  • 1 tsp Kosher salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder
  • 1/4 cup buffalo sauce
  • 1 tbsp melted unsalted butter

Instructions:

  1. Place the frozen wings in the air fryer basket in a single layer. Do not add oil or seasoning at this stage.
  2. Set the air fryer to 360°F (180°C) and cook for 12 minutes to defrost the meat and begin rendering the fat.
  3. Remove the wings from the basket. Use paper towels to pat the wings thoroughly dry. Drain any liquid/melted ice from the bottom of the air fryer pan.
  4. In a small bowl, whisk together the salt, garlic powder, black pepper, and baking powder. Toss the dried wings in the seasoning mixture until evenly coated.
  5. Increase the air fryer temperature to 400°F (200°C). Return the wings to the basket in a single layer and cook for 15-18 minutes, flipping halfway through, until the skin is mahogany-colored and crispy.
  6. Whisk the buffalo sauce and melted butter together in a large bowl. Add the hot wings and toss to coat before serving immediately.
