Ingredients:
- 1 lb frozen bone-in chicken wing sections (IQF)
- 1 tsp Kosher salt
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp baking powder
- 1/4 cup buffalo sauce
- 1 tbsp melted unsalted butter
Instructions:
- Place the frozen wings in the air fryer basket in a single layer. Do not add oil or seasoning at this stage.
- Set the air fryer to 360°F (180°C) and cook for 12 minutes to defrost the meat and begin rendering the fat.
- Remove the wings from the basket. Use paper towels to pat the wings thoroughly dry. Drain any liquid/melted ice from the bottom of the air fryer pan.
- In a small bowl, whisk together the salt, garlic powder, black pepper, and baking powder. Toss the dried wings in the seasoning mixture until evenly coated.
- Increase the air fryer temperature to 400°F (200°C). Return the wings to the basket in a single layer and cook for 15-18 minutes, flipping halfway through, until the skin is mahogany-colored and crispy.
- Whisk the buffalo sauce and melted butter together in a large bowl. Add the hot wings and toss to coat before serving immediately.
