Ingredients:
- 2 lbs fresh peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 2 cups heavy whipping cream, chilled
- 1 cup whole milk, chilled
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
Instructions:
- Place diced peaches, 1/4 cup sugar, lemon juice, and salt in a saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the peaches are soft and the liquid has reduced by about a third.
- Transfer the mixture to a blender and puree until completely smooth; let cool completely in the fridge.
- In a large bowl, whisk together the chilled whole milk and 3/4 cup sugar until the sugar has completely dissolved.
- Stir in the heavy whipping cream and vanilla extract.
- Fold in the chilled peach puree until the base is a uniform, pale orange color.
- Pour the mixture into an ice cream maker and process according to manufacturer instructions (usually 20–25 minutes) until it reaches a soft serve consistency.
