Ingredients:

  • 2 lbs fresh peaches, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 2 cups heavy whipping cream, chilled
  • 1 cup whole milk, chilled
  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions:

  1. Place diced peaches, 1/4 cup sugar, lemon juice, and salt in a saucepan over medium heat.
  2. Simmer for 8–10 minutes, stirring occasionally, until the peaches are soft and the liquid has reduced by about a third.
  3. Transfer the mixture to a blender and puree until completely smooth; let cool completely in the fridge.
  4. In a large bowl, whisk together the chilled whole milk and 3/4 cup sugar until the sugar has completely dissolved.
  5. Stir in the heavy whipping cream and vanilla extract.
  6. Fold in the chilled peach puree until the base is a uniform, pale orange color.
  7. Pour the mixture into an ice cream maker and process according to manufacturer instructions (usually 20–25 minutes) until it reaches a soft serve consistency.
