Ingredients:

  • 12 oz fresh or frozen cranberries
  • 1/2 cup fresh orange juice
  • 1/2 cup filtered water
  • 1/2 cup Grade A maple syrup
  • 1 tsp fresh orange zest
  • 1 cinnamon stick
  • 1/4 tsp sea salt

Instructions:

  1. Rinse cranberries. Pick through the 12 oz of berries and discard any that are soft or shriveled.
  2. Combine liquids. Pour 1/2 cup fresh orange juice, 1/2 cup filtered water, and 1/2 cup maple syrup into the saucepan.
  3. Add aromatics. Place 1 cinnamon stick and 1/4 tsp sea salt into the liquid mixture.
  4. Dissolve syrup. Heat the mixture over medium high heat until the liquid begins to simmer steadily.
  5. Incorporate berries. Carefully slide the cranberries into the bubbling liquid. Note: Be careful of splashes as the cold berries hit the hot liquid.
  6. Simmer and pop. Cook for about 10 minutes, stirring occasionally, until the berries start to burst and the liquid thickens.
  7. Add zest. Stir in 1 tsp fresh orange zest during the last 2 minutes of cooking.
  8. Remove heat. Take the pan off the stove once the sauce coats the back of a spoon.
  9. Cool completely. Let the sauce rest at room temperature until it stops steaming and begins to set.
  10. Chill. Transfer to a glass bowl and refrigerate for at least 2 hours before serving.
