Ingredients:

  • 1.5 lbs fresh plums, pitted and sliced into eighths
  • 1 tbsp lemon juice
  • 1 tbsp melted coconut oil or butter
  • 3 large eggs
  • 1/3 cup pure maple syrup or honey
  • 1 cup whole milk or unsweetened almond milk
  • 1/4 cup all-purpose flour
  • 1/4 cup superfine almond flour
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish with melted coconut oil or butter, ensuring the sides are well-coated to prevent sticking.
  3. Toss the sliced plums with lemon juice and arrange them in a single, tight layer at the bottom of the dish.
  4. In a large bowl, whisk the eggs and maple syrup until the mixture is pale and slightly frothy.
  5. Slowly stir in the milk and vanilla extract.
  6. Sift in the all-purpose flour, almond flour, and salt. Whisk gently—only until the flour streaks disappear—to avoid incorporating too much air.
  7. Carefully pour the batter over the arranged plums, allowing the fruit to be partially submerged.
  8. Bake for 40–45 minutes. The dessert is finished when the edges are a deep mahogany-colored brown and the center has a slight, jelly-like jiggle but is no longer liquid.
  9. Allow to cool for 10 minutes before slicing to let the custard set.
