Ingredients:

  • 2 lbs fresh spinach, chopped
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Sauté chopped fresh spinach in 1 tbsp olive oil until wilted and bright green. Note: This happens fast, usually within 2-3 minutes.
  2. Place the wilted spinach in a colander and use a kitchen towel to squeeze out all excess liquid. Note: If using frozen, thaw first and squeeze until it's a dense ball.
  3. Melt 3 tbsp unsalted butter in a large skillet over medium heat.
  4. Add diced onion and sauté until translucent and soft.
  5. Stir in minced garlic and cook for 1-2 mins until fragrant but not brown.
  6. Reduce heat to medium low.
  7. Stir in cubed cream cheese, 1/2 cup heavy cream, and 1/4 cup milk.
  8. Whisk constantly until the sauce is smooth and glossy. Note: Ensure no cream cheese lumps remain.
  9. Fold in the squeezed spinach, 1/4 tsp nutmeg, 1/2 tsp salt, and 1/4 tsp pepper.
  10. Stir gently for 2-3 mins until the spinach is thoroughly coated and heated through.
