Ingredients:
- 12 oz semi-sweet chocolate chips
- 6 oz milk chocolate chips
- 1 tbsp refined coconut oil
- 16 oz roasted salted peanuts
- 1/2 tsp flaky sea salt
Instructions:
- Combine the semi-sweet chocolate chips, milk chocolate chips, and coconut oil in a large microwave-safe glass bowl.
- Heat the mixture in 30-second intervals at 50% power, stirring vigorously between each interval. Stop when only a few small lumps remain and allow residual heat to melt them completely.
- Fold the entire 16 oz of roasted salted peanuts into the melted chocolate using a silicone spatula until every peanut is thoroughly submerged and coated.
- Line a baking sheet with parchment paper. Using a small cookie scoop or two tablespoons, drop rounded mounds of the mixture onto the sheet.
- Sprinkle with optional flaky sea salt and refrigerate for 30 minutes to allow the chocolate to stabilize and create a shattering texture.
