Ingredients:

  • 12 oz semi-sweet chocolate chips
  • 6 oz milk chocolate chips
  • 1 tbsp refined coconut oil
  • 16 oz roasted salted peanuts
  • 1/2 tsp flaky sea salt

Instructions:

  1. Combine the semi-sweet chocolate chips, milk chocolate chips, and coconut oil in a large microwave-safe glass bowl.
  2. Heat the mixture in 30-second intervals at 50% power, stirring vigorously between each interval. Stop when only a few small lumps remain and allow residual heat to melt them completely.
  3. Fold the entire 16 oz of roasted salted peanuts into the melted chocolate using a silicone spatula until every peanut is thoroughly submerged and coated.
  4. Line a baking sheet with parchment paper. Using a small cookie scoop or two tablespoons, drop rounded mounds of the mixture onto the sheet.
  5. Sprinkle with optional flaky sea salt and refrigerate for 30 minutes to allow the chocolate to stabilize and create a shattering texture.
