Ingredients:
- 4 tbsp (56g) high-quality unsalted butter
- 3 cloves (15g) garlic, minced fine
- 1 small (40g) shallot, finely diced
- 2 cups (480ml) heavy whipping cream
- 2 tbsp (15g) Cajun seasoning
- 1/4 tsp (0.5g) smoked paprika
- 1.5 cups (150g) freshly grated Parmesan cheese
- 1/2 tsp (2.5ml) fresh lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
- In a large heavy-bottomed skillet over medium-low heat, melt the butter until foaming. Add the minced garlic and diced shallots. Sauté for 4 minutes until the shallots are translucent and the garlic is fragrant without browning.
- Stir in the Cajun seasoning and smoked paprika directly into the butter until the oil turns a deep reddish orange.
- Slowly pour in the heavy whipping cream and increase heat slightly to bring the mixture to a gentle simmer. Simmer for 8 minutes until the sauce thickens and tiny bubbles cover the surface.
- Reduce heat to low and gradually whisk in the freshly grated Parmesan cheese in small batches. Stir continuously until the cheese is fully melted and the sauce is smooth.
- Remove from heat. Stir in the lemon juice and garnish with fresh parsley. Season to taste. Serve immediately over pasta or protein.
