Ingredients:

  • 4 tbsp (56g) high-quality unsalted butter
  • 3 cloves (15g) garlic, minced fine
  • 1 small (40g) shallot, finely diced
  • 2 cups (480ml) heavy whipping cream
  • 2 tbsp (15g) Cajun seasoning
  • 1/4 tsp (0.5g) smoked paprika
  • 1.5 cups (150g) freshly grated Parmesan cheese
  • 1/2 tsp (2.5ml) fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. In a large heavy-bottomed skillet over medium-low heat, melt the butter until foaming. Add the minced garlic and diced shallots. Sauté for 4 minutes until the shallots are translucent and the garlic is fragrant without browning.
  2. Stir in the Cajun seasoning and smoked paprika directly into the butter until the oil turns a deep reddish orange.
  3. Slowly pour in the heavy whipping cream and increase heat slightly to bring the mixture to a gentle simmer. Simmer for 8 minutes until the sauce thickens and tiny bubbles cover the surface.
  4. Reduce heat to low and gradually whisk in the freshly grated Parmesan cheese in small batches. Stir continuously until the cheese is fully melted and the sauce is smooth.
  5. Remove from heat. Stir in the lemon juice and garnish with fresh parsley. Season to taste. Serve immediately over pasta or protein.
