Ingredients:
- 6 large red or black plums (approx. 2 lbs / 900g), halved and pitted
- 1 tbsp (15g) unsalted butter, melted
- 1/3 cup (65g) light brown sugar, packed
- 2 tbsp (28g) unsalted butter, softened
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1g) sea salt
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9x9 inch ceramic or glass baking dish with 1 tbsp (15g) of melted butter.
- Slice the plums in half, remove the pits, and arrange them cut-side up in the dish, ensuring they are snug but not overlapping.
- In a small bowl, combine the softened butter, brown sugar, cinnamon, salt, and vanilla. Use a spatula to mash them together until they form a thick, grainy paste.
- Spoon equal portions of the sugar mixture onto the center of each plum half, pressing down slightly so it adheres.
- Bake for 20–25 minutes until the plums have slumped slightly and the sugar has transformed into a bubbling, mahogany-colored syrup.
