Ingredients:

  • 6 large red or black plums (approx. 2 lbs / 900g), halved and pitted
  • 1 tbsp (15g) unsalted butter, melted
  • 1/3 cup (65g) light brown sugar, packed
  • 2 tbsp (28g) unsalted butter, softened
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1g) sea salt
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x9 inch ceramic or glass baking dish with 1 tbsp (15g) of melted butter.
  2. Slice the plums in half, remove the pits, and arrange them cut-side up in the dish, ensuring they are snug but not overlapping.
  3. In a small bowl, combine the softened butter, brown sugar, cinnamon, salt, and vanilla. Use a spatula to mash them together until they form a thick, grainy paste.
  4. Spoon equal portions of the sugar mixture onto the center of each plum half, pressing down slightly so it adheres.
  5. Bake for 20–25 minutes until the plums have slumped slightly and the sugar has transformed into a bubbling, mahogany-colored syrup.
