Ingredients:

  • 2 lbs Lean Ground Beef (80/20 or 90/10)
  • 1 large Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tsp Fine Sea Salt
  • 1/2 tsp Black Pepper, freshly ground
  • 1 cup Dill Pickle chips, chopped
  • 3/4 cup Mayonnaise
  • 2 tbsp Yellow Mustard
  • 2 tbsp Sweet Pickle Relish
  • 1 tsp White Vinegar
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 3 cups Sharp Cheddar or American Cheese, shredded
  • 32 oz Frozen Tater Tots
  • 1 tbsp Sesame Seeds
  • 2 cups Iceberg Lettuce, shredded

Instructions:

  1. Preheat the oven to 400°F (200°C). In a large skillet over medium-high heat, brown the ground beef and diced onions, breaking the beef into small crumbles.
  2. Add the minced garlic, salt, and pepper to the skillet as the beef browns. Once fully cooked, drain the excess grease thoroughly to ensure a crisp base.
  3. In a small mixing bowl, whisk together the mayonnaise, mustard, relish, vinegar, paprika, onion powder, and garlic powder to create the secret sauce.
  4. Stir half of the sauce into the beef mixture along with the chopped pickles. Mix until the beef is velvety and coated.
  5. Spread the beef into the bottom of your baking dish in an even layer.
  6. Evenly sprinkle the shredded cheese over the beef layer, then arrange the frozen tater tots in a single, tight layer across the top.
  7. Sprinkle sesame seeds over the tots and bake for 35-40 minutes, or until the tater tots reach a golden-brown, shattering crispness.
  8. Remove from the oven and top with cold shredded iceberg lettuce and the remaining chilled secret sauce immediately before serving.
