Ingredients:

  • 1 lb lean ground beef
  • 1/2 cup water
  • 2 tbsp mild taco seasoning
  • 1 1/2 cups shredded mild cheddar cheese
  • 12 corn tortillas
  • 2 tbsp neutral oil

Instructions:

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains, then drain any excess fat.
  2. Stir in the taco seasoning and water, simmering for 5-7 minutes until the liquid has reduced to a thick glaze.
  3. Preheat your oven to 400°F (200°C).
  4. Lightly brush each tortilla with neutral oil.
  5. Place a pinch of shredded cheddar cheese at the bottom of each shell, followed by a scoop of the beef mixture, and fold tortillas into a U shape.
  6. Arrange tacos on a rimmed baking sheet, using a taco rack or folded aluminum foil strips to prop them up.
  7. Bake for 12-15 minutes until the edges are golden-brown and the cheese is fully melted and bubbling.
