Ingredients:

  • 60g unsweetened cocoa powder
  • 150g coconut sugar
  • 35g all-purpose flour
  • 3 large eggs, room temperature
  • 115g unsalted butter, melted
  • 10ml pure vanilla extract
  • 1.5g sea salt

Instructions:

  1. Preheat the oven to 350°F (180°C). Generously grease an 8x8 inch square baking dish.
  2. Whisk the 150g coconut sugar and 3 large eggs in a bowl until the mixture looks pale and frothy.
  3. Pour in the 115g melted butter and 10ml vanilla extract.
  4. Sift the 60g cocoa powder, 35g all purpose flour, and 1.5g sea salt directly over the wet ingredients.
  5. Fold the dry ingredients into the wet until no streaks of white flour remain.
  6. Transfer the batter into the prepared dish and smooth the top with a spatula.
  7. Bake for 35 minutes until the edges are set and the top is dull and crackled.
  8. Remove from the oven and let it rest for at least 15 minutes before serving.
