Ingredients:

  • 3 cups Cooked chicken breast, shredded or diced into ½-inch cubes
  • 2 Large ripe Hass avocados
  • 2 tbsp Freshly squeezed lime juice
  • 1 tsp Lime zest
  • 1/2 cup Celery, finely diced
  • 1/4 cup Red onion, finely minced
  • 1/2 cup Fresh cilantro, roughly chopped
  • 1/4 tsp Garlic powder
  • 1/2 tsp Cumin
  • 1/2 tsp Sea salt
  • 1/4 tsp Freshly cracked black pepper

Instructions:

  1. Prep the aromatics. Mince the 1/4 cup red onion and 1/2 cup celery into small, uniform pieces.
  2. Macerate the onions. Place the minced red onion in a small bowl with the 2 tbsp lime juice. Wait 5 minutes until the onion turns slightly pink. This softens the flavor.
  3. Process the avocado. Halve the 2 large avocados, remove the pits, and scoop the flesh into your large mixing bowl.
  4. Create the binder. Add the lime juice (with the onions), 1 tsp lime zest, garlic powder, cumin, salt, and pepper to the avocado.
  5. Mash the mixture. Use a fork to mash until the texture is mostly smooth but still has small, visible chunks.
  6. Add the greens. Fold in the 1/2 cup chopped cilantro and the diced celery.
  7. Introduce the protein. Add the 3 cups of cooked chicken to the bowl.
  8. The final fold. Gently stir the chicken into the avocado mixture until every piece of chicken is coated in the green dressing.
  9. Taste and adjust. Season with a tiny bit more salt or lime if the flavor feels flat.
  10. Serve immediately. Scoop into lettuce wraps or onto toasted bread until the aroma of fresh lime fills the room.
